A tasty twist on red beans and rice.
Treat yourself to the authentic flavors of the Bayou. This GLUTEN-FREE mix can be made as a soup, or use less liquid and make a Cajun dish of red beans and rice. Add mild or spicy sausage or catfish for a southern gourmet treat like no other. Try garnishing with popcorn shrimp for an extra special touch!
Instructions
Rinse beans thoroughly and soak in plenty of water overnight.* Drain and rinse again.
* Time saving Tip: Rinse beans, cover in 2 qts. of water and bring to a boil for 10 minutes. Cover and let stand for 1-2 hours, drain and rinse again.
Place in crockpot or slow cooker:
Bayou Beans mix
contents of spice packet
1 ½ - 2 quarts of water
14 1/2 oz can of stewed tomatoes
15 oz can of tomato sauce
1 lb. of cooked or smoked sausage, catfish or shrimp
Cook 6-8 hours on high.
OR
Combine above ingredients in a 3 qt. pot, bring to boil, reduce heat, cover and simmer 2-4 hours or until tender.
Add salt to taste at the end of cooking. Serve over cooked rice if desired.
Serve with a salad and rolls for a simple but wholesome meal.
