A colorful chili that creates a delicious taco flavor from the blend of beans and corn.
Spice up your dinner with this out of the ordinary chili. A wonderful blend of beans and Posole corn give it a tasty taco flavor. Meat is optional in the GLUTEN-FREE recipe. Garnish with corn chips, cheese and even sour cream! If you have leftovers make a Fiesta Taco Salad!
Instructions
Rinse beans thoroughly and soak in plenty of water overnight.* Drain and rinse again.
* Time saving Tip: Rinse beans, cover in 2 qts. of water and bring to a boil for 10 minutes. Cover and let stand for 1-2 hours, drain and rinse again.
Place in crockpot or slow cooker:
Fiesta bean mix
contents of spice packet
1 ½ - 2 quarts of water
Two 14 1/2 oz cans of diced tomatoes
4 oz. can of mild or hot diced green chilies
1 lb. of cooked ground beef or ground turkey
Cook 6-8 hours on high.
OR
Combine above ingredients in a 3 qt. pot, bring to boil, reduce heat, cover and simmer 2-4 hours or until tender.
Add salt to taste at the end of cooking.
Serve with Mexican rice and cornbread for a simple but wholesome meal.
