A traditional New Mexican dish.
This is a hearty meal with a Pueblo Indian flavor made from hominy. This GLUTEN-FREE recipe can be made as a soup, or cooked until thickened and used for burrito filling. If you’ve never tried this traditional New Mexican dish you are in for a delightful surprise!
Instructions
Rinse posole thoroughly and soak in plenty of water overnight.* Drain and rinse again.
* Time saving Tip: Rinse beans, cover in 2 qts. of water and bring to a boil for 10 minutes. Cover and let stand for 1-2 hours, drain and rinse again.
Place in crockpot or slow cooker:
Posole mix
contents of spice packet
2-2 ½ quarts of water
4 oz. can of mild or hot diced green chilies or jalapenos
1 – 2 lbs. diced pork, cooked
Cook 6-8 hours on high.
OR
Combine above ingredients in a 3 qt. pot, bring to boil, reduce heat, cover and simmer 2-4 hours or until tender.
Add salt to taste at the end of cooking.
Serve with cheese and warm tortillas for a simple but wholesome meal.
