Rocky Mountain Cranberry Bean Soup Mix

 A mild soup that gets it's name from the color of the beans.

 

This is a great alternative to turkey noodle soup. It is mildly seasoned, GLUTEN-FREE, and packed with nutrition. The cranberry bean, which has more folate than other beans, gets its name from its color, not its flavor. But go ahead and garnish this delightful soup with some dried cranberries if you would like! We've tried it, and it's a great twist!

 

Instructions

Rinse beans thoroughly and soak in plenty of water overnight.* Drain and rinse again.

 

* Time saving Tip: Rinse beans, cover in 2 qts. of water and bring to a boil for 10 minutes.  Cover and let stand for 1-2 hours, drain and rinse again.

 

Place in crockpot or slow cooker:

cranberry beans

contents of spice packet

2 quarts of water or broth

1 lb. of cooked or smoked turkey or sausage

Cook 6-8 hours on high.

 

OR

Combine above ingredients in a 3 qt. pot, bring to boil, reduce heat, cover and simmer 2-4 hours or until tender.

 

Add salt to taste at the end of cooking.

Serve with a salad and bread for a simple but wholesome meal.
