A simple to prepare, vegetarian recipe with colorful Anasazi beans.
A terrific vegetable bean soup! This mildly seasoned GLUTEN-FREE soup is made with colorful and delicious Anasazi beans, straight from the Southwest. As simple as it gets to provide a nutritious meal for your family!
Instructions
Rinse beans thoroughly and soak in plenty of water overnight.* Drain and rinse again.
* Time saving Tip: Rinse beans, cover in 2 qts. of water and bring to a boil for 10 minutes. Cover and let stand for 1-2 hours, drain and rinse again.
Place in crockpot or slow cooker:
Southwest bean mix
contents of spice packet
3 pints of water
Two 8 oz cans of Tomato Sauce
Cook 6-8 hours on high.
OR
Combine above ingredients in a 3 qt. pot, bring to boil, reduce heat, cover and simmer 2-4 hours or until tender.
Add salt to taste at the end of cooking.
Serve with a salad and cornbread for a simple but wholesome meal.
